  • 1 cup unsweetened pineapple juice
  • 3/4 cup tomato ketchup
  • 1/2 cup. low-sodium soy sauce
  • 1/2 cup brown sugar
  • 2 cloves garlic crushed
  • 1 tbsp finely grated ginger
  • 500 g boneless skinless chicken breasts
  • 1 tsp vegetable oil plus more for grill
  • 1 pineapple sliced into rings & halved
  • Thinly sliced green onions for garnish

Instructions
  1. 1 cup unsweetened pineapple juice
  2. 3/4 cup tomato ketchup
  3. 1/2 cup. low-sodium soy sauce
  4. 1/2 cup brown sugar
  5. 2 cloves garlic, crushed
  6. 1 tbsp finely grated ginger
  7. 500g boneless skinless chicken breasts
  8. 1 tsp vegetable oil, plus more for grill
  9. 1 pineapple, sliced into rings & halved
  10. Thinly sliced green onions, for garnish
  11. In a large bowl, whisk together pineapple juice, ketchup, soy sauce, brown sugar, garlic, and ginger until combined.
  12. Add chicken to a large resealable plastic bag and pour in marinade. Let marinate in the fridge at least 2 hours and up to overnight.
  13. When ready to grill, heat grill to high. Oil grates and grill chicken, basting with marinade, until charred and cooked through, 8 minutes per side.
  14. Toss pineapple with oil and grill until charred, 2 minutes per side.
  15. Garnish chicken and pineapple with green onions before serving.
