SMOKEY GRILLED SWEET POTATOES WITH CORIANDER & LIME

Ingredients
  • 2 kg Sweet Potatoes scrubbed well and sliced lengthwise approx 5cm thick
  • 2 tablespoons olive oil
  • 4 tablespoons Sweet & Smoky BBQ Dry Rub Mix see note
  • 3 limes halved
  • 1 leaves bunch coriander picked and chopped
Smoky BBQ Dry Rub Mix
  • 1/4 cup dark brown sugar
  • 2 tablespoons kosher salt or coarse sea salt
  • 1 tablespoon + 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon dried Rosemary crumbled with your hands
  • 1 teaspoon cumin
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground chipotle chili
  • 1/4 teaspoon ground allspice

Smoky BBQ Dry Rub Mix
  • 1/4 cup dark brown sugar
  • 2 tablespoons kosher salt or coarse sea salt
  • 1 tablespoon + 1 teaspoon smoked paprika

Instructions
  1. Preheat your BBQ grill to medium-high (direct heat).
  2. Brush the sliced sweet potatoes with olive oil and rub with about 1 teaspoon of spice mix per side.
  3. Lay potatoes on the grill and cook until grill lines form, 5-6 minutes. Flip and cook on the other side until cooked through and tender, about 5-6 more minutes.
  4. Remove from the grill and lay on a platter. Squeeze lime juice over the top and sprinkle with coriander. Serve immediately.
Recipe Notes

Keep the dry rub in the fridge it will last for up to a month and can be used on a variety of meats or other vegies!
